Bake 52 Classic pancakes with raspberry sauce

Yet another recipe I’ve never tried. I have made my share of pancakes and yet never made buttermilk pancakes before. Now, I know its not proper to brag about one's own baking, but I’m going to anyway! These were the BEST pancakes I’ve EVER had. I don’t know if it was the buttermilk or the tips on how to make them fluffy.... but all I can say is eat your heart out, IHOP. I wanted to make the raspberry sauce from scratch but didn’t want to spend the time so I bought strawberry sauce in the syrup isle and topped with fresh raspberries. Needless to say, next time I will double the recipe because everyone was begging for more.

Bake 52: week 16 - Blackout Cake


This is last week's cake and I'm just getting around to posting it. Still trying to learn how do this without my husband needing to help me :-).

I enjoyed making this cake because it was the first layered cake I've made. It turned out decadent and rich. Upon seeing this cake my husband proclaimed he would be eating two pieces but after half of the first piece, he changed his mind. It was really good, just really rich.


I had a piece a couple of days later after being in the fridge and I liked it even more. It was chewy like a brownie.  The recipe called for one cup of brewed coffee, but I used hot chocolate instead. One of my cakes fell apart a little and I had to piece it back together, but nobody could tell after I got the pudding on. Oh, by the way, my the pudding was fabulous and I will definitely be making it in the future just by itself ;-).

Bake 52: Tres Leches Cake


I have heard of this cake before, though I have never actually tried it. For that reason, I was excited to try this recipe. I too had problems with the sweetened condensed milk. It over-flowed all over my brand-new microwave :-(   and got really thick and kinda curdled (which I am pretty sure it's not supposed to do). Seeing as I (nor my neighbors) had any more sweetened condensed milk (and not wanting to run to the store mid-project) I opted to use it anyway because it tasted kind of like a chewy caramel.
In the end, the cake was amazing! Husband and neighbor both savored it and were begging for more! (or, at least my husband was).
